Pamela Briere, the owner of West Main Taproom + Grill, knows being an entrepreneur. She knows the 23-hour days a business requires when it first takes off. She knows putting in 110% and having to come up with creative solutions. Luckily, for the residents and visitors of Parker, Colorado, she also knows how to make really good food.
At West Main Taproom + Grill, you won’t find a giant, never-ending menu. Instead, you’ll find a menu that changes seasonally, curated to use local ingredients and clever combinations. According to owner Pamela Briere, “Here at West Main, if you've had our food and you've dined with us, nothing is frozen. Everything is farm to table. To the best of my ability,
based on seasonality, everything is locally sourced.” Additionally, customers will find a gluten-free menu and a staff that cares deeply about how people experience food.
“Besides being locally owned, my culture is family. My culture is this is not a corporation.” Pamela comments on her staff noting, “Because truly honestly, in the service industry, if you don't have good employees, your business is worth nothing. You can have the best food in the world, but if you have the worst service in the world, no one is going to come back.”
She also wants people to know that working in the restaurant industry can be a career, “This is an industry that I don't think people understand, you can grow in this industry. And that has always been my motto. So you come in, you show me what you got, you show me that you're willing to roll up your sleeves and work, and I'll promote you. And with that, I was selected by the National Restaurant Association. I am in the national apprenticeship program.”
Along with supporting her employees, Pamela has felt the support of the community. “You talk about supporting local, this town supported my crazy idea for Parker Fashion Week.
I mean, they came out in droves, red carpet, they're like, "What is this lady doing?" But they support local. The town council supports it, the mayor supports it.” Parker Fashion Week was born in 2020 and has continued each year as South Denver’s Premier Fashion Show. Hosted by West Main Taproom + Grill and both originated and coordinated by Pamela each year, the event has grown into a community staple.
